2 pkgs. (3.4 oz.) instant vanilla pudding
Preheat oven to 350 F. Grease two loaf pans.
In a large bowl, combine the flour, sugar, pudding mix, soda, salt and cinnamon.
In a medium bowl, whisk the eggs, banana, oil and vanilla. Stir into the dry ingredients until just moistened. Stir in nuts.
Bake in two (2) 8"x 4" loaf pans for 55 – 65 minutes, or until
toothpick inserted into middle of loaf comes out clean. Cool 10 minutes
before removing from pans. Continue cooling on wire racks.
