Strawberry Blossom Biscuit


62 g Tree Top Applesauce

27 g Tree Top Strawberry Flake Powder

250 g flour

9.20 g baking powder

67 g sugar

2.30 g baking soda

1.50 g salt

0.60 g cinnamon

103 g vegetable shortening

61 g buttermilk

59 g water

244 g strawberries - diced

13 g strawberry flavoring



Preheat oven to 450 F.

In a medium bowl, sift together flour, baking powder, baking soda, sugar, salt and cinnamon. Using a pastry blender, cut in shortening until mixture resembles course crumbs. Make a well in the center of the dry mixture.

In a small mixing bowl, combine buttermilk, applesauce, water, diced strawberries, strawberry flake powder and strawberry flavoring. Add to well in dry mixture all at once. Using a fork, stir just until mixture is moistened.

Turn dough out on to lightly floured surface. Quickly knead dough by gently folding and pressing 10-12 strokes, or until dough is nearly smooth. Pat or lightly roll dough to 1/2" thick and cut with biscuit cutter. Place biscuits one inch apart on an ungreased baking sheet. Bake for 10-12 minutes, or until golden brown. Remove biscuits from baking sheet and serve warm. Makes 10-12 biscuits.
