Low-Fat Blueberry Muffins


19 g Tree Top Apple Powder

283 g pastry flour

6 g baking powder

2.75 g salt

14 g Canola oil

57 g egg white

1.30 g vanilla

0.70 g butter flavoring

165 g water

71 g non-fat plain yogurt

28 g orange juice

127 g blueberries, fresh



Preheat oven to 375 F. Grease muffin tins or line with paper cups.

In a medium mixing bowl, combine flour, baking powder, salt and apple powder; set aside.

Beat oil, egg whites, sugar, vanilla and butter flavoring until sugar is dissolved. At lower speed, add water and yogurt; blend well. Add orange juice. Toss blueberries in small amount of flour mixture. Fold flour mixture into wet mixture, stir in blueberries. Do not over mix.

Pour batter into muffin tins. Bake 30 minutes. Allow to cool in tins for 5 minutes.

Makes 1 dozen muffins.
