Gluten-Free Cinnamon Apple Bread


86 g Tree Top Infused Apple Dices, ½ x 3/8 x ¼, Item #137

Tree Top Apple Juice

113 g butter

110 g brown sugar

100 g granulated sugar

100 g eggs

80 g sour cream

15 g banana, mashed

2.50 g vanilla

256 g flour

4.60 g baking powder

4.60 g baking soda

1.50 g cinnamon

61 g chopped walnuts, optional



Preheat oven to 350°F.  Grease loaf pan.

In small bowl, cover apple dices with apple juice.  Allow to soak for 15 minutes.  Drain well before using.

Cream butter and sugars; beat in eggs.  Stir in sour cream, banana and vanilla.  In a separate bowl, combine flour, baking powder, baking soda and cinnamon.  Gradually add to butter mixture.  Gently stir in apples and nuts.  Spoon into prepared loaf pan and bake one hour.

Cool on wire rack 10 minutes; remove from pan and continue cooling.
