85 g Tree Top Yellow Cling Peach Puree, 32 Brix

Glazed Bacon-Wrapped Dates

455 g hickory smoked bacon

455 g Medjool dates

113 g Maytag blue cheese

Peach Glaze

85 g honey

60 g red wine vinegar

29 g lime juice, fresh



Preheat oven to 375 F.

Slice dates lengthwise, not all the way through. Stuff each date with 1 tsp. blue cheese and close date.

Cut bacon strips in half. Wrap one half slice of bacon around each date and secure with a toothpick. Arrange on a baking sheet.

Roast in oven for 20 minutes, turning dates halfway through. Brush dates with peach glaze and continue to roast for 10 more minutes until bacon is crisp.

Yield: 24 dates

Peach Glaze:

Combine all ingredients in a medium saucepan over medium heat. Simmer for 20 minutes until thickened.

Yield: 3/4 cup

Serve roasted dates with additional glaze for dipping.
