Banana Nutmeg Muffins


19 g Tree Top Drum Dried Apple Powder

140 g all-purpose flour

140 g whole-wheat flour

96 g sugar

9.80 g baking powder

2.30 g baking soda

1.40 g nutmeg

0.70 g salt

.33 g allspice

50 g egg

122.5 g skim milk

1 medium banana, ripe, mashed

45 g water



Heat oven to 400 F. Spray muffin tins or line with paper cups.

In a large bowl, combine flours, sugar, baking powder, baking soda, nutmeg, salt, allspice and apple powder; mix well.

Beat egg in a small bowl. Add skim milk, banana, and water; mix well and add to dry ingredients, stirring just until moistened.

Fill muffin tins 2/3 full. Bake 12-13 minutes or until tops are golden brown. Remove from tins immediately. Serve warm.

Makes 1 dozen muffins.
