Arugala Salad with Strawberry Dressing
- 2 tbs. Pistachio nuts
- 1 4-oz. log goat cheese (Chevre)
- 4 cups arugula leaves
- ¼ cup berries (your choice)
- ¼ cup jicama, shaved into thin strips (optional)
- 252 g Tree Top Strawberry Fruit Bar Base
- 60 g Balsamic vinegar
- 14 g Canola oil
- 7.50 g honey
- dash of salt
Combine all ingredients in a shaker. Shake well to blend ingredients.
Spread pistachio nuts on piece of waxed paper. Roll goat cheese in pistachio nuts until well coated.
Slice goat cheese crosswise into 8 slices.
In salad bowl, combine arugula with a few sliced strawberries, topping with berries, goat cheese slices and jicama. Drizzle with strawberry dressing.
Makes 4 servings.
