Ingredients
Muffin
110 g Tree Top Apple Purée
256 g all-purpose flour
12 g baking powder
50 g sugar
3 g cinnamon
2 g nutmeg
9 g salt
100 g eggs
245 g milk
112 g canola oil
3.8 g vanilla
Streusel Topping
32 g all-purpose flour
55 g brown sugar
1.5 g cinnamon
28 g butter, cold
Directions
Preheat oven to 400 F. Place paper cups in a 12-cup muffin tin.
In a medium bowl, combine flour, baking powder, sugar, cinnamon, nutmeg, and salt.
In a large bowl, beat eggs, milk, oil and vanilla for 1 minute on
medium. Add flour mixture. Beat just until no streaks of flour remain.
Stir in apples. Do not overmix!
Spoon batter into muffin cups. Top with streusel mix.
Bake for 18 to 20 minutes or until tops of muffins spring back when pressed lightly. Transfer to a wire rack to cool.
Makes 12 muffins.
