Preheat oven to 350 F. Line baking sheet with parchment paper.
Combine flour, oats, baking powder, baking soda and salt in medium bowl; mix well and set aside.
Beat sugars and butter in large bowl until light and fluffy. Add
vanilla, buttermilk and egg; beat well. Gradually add flour mixture;
beat at low speed until just combined. Fold in apples.
Drop dough by 2 tsp., 2-inches apart on prepared baking sheet. Bake for
9-10 minutes. Cool on pan for 3 minutes. Remove cookies from pans; cool
completely on wire rack.
Yield: 2 dozen cookies
