Preheat oven to 400 F. Prepare mini muffin tin with spray oil.
Sift the flour, baking powder, salt and baking soda into a mixing bowl.
Stir in the sugar and Fruit Sensations® and mix until well combined.
Make a well in the center of the dry ingredients and add the banana,
orange rind, apple juice, milk, egg and apple sauce. Mix together well
to form a thick batter. Fill the muffin cups almost to the top. Sprinkle
with a cinnamon and sugar mixture.
Bake for 8 minutes. Remove to wire rack to cool.
Makes about 48 mini muffins.
