Apple Honey Wheat Bread


43 g Tree Top AJC Infused Apple Dices

948 g warm water

28 g yeast

170 g honey

150 g eggs, beaten

18 g salt

512 g unbleached white flour

36 g dry non-fat milk

85.50 g wheat germ

11.85 g 7-grain hot cereal (dry)

whole wheat flour

109 g Canola oil


sesame seeds (optional)



In a very large bowl, mix water, yeast, honey, eggs and salt. Beat well as you add white flour, dry milk, wheat germ, cereal and enough whole wheat flour to make a slightly sticky dough. Add apples and oil as you knead bread in bowl. Dough should be heavier than pizza dough; if too sticky, add more flour. Place dough in a large greased bowl. Turn to coat and let rise twice.

Grease three loaf pans (or 46 oz. cans) with Crisco. Punch air out of dough. Cut off chunks, roll in cornmeal and/or sesame seeds before putting into pans/cans. Pans/cans should be 2/3 full.

Bake at 350 F for one hour. Remove from pan/cans after 10 minutes. Let cool, then wrap in foil and freeze.
