Preheat oven to 350 F. Grease and flour an 8-inch square baking dish.
Rehydrate the apples with the apple juice for at least 5 minutes.
In a large mixing bowl, combine melted 113 g of the butter with the
brown sugar. Beat in the eggs, one at a time. Add the applesauce and
vanilla.
Stir in the whole-wheat flour. Combine the all-purpose flour, 4.50 g of
the cinnamon, baking powder and baking soda in a small bowl and add to
the batter. Add the apples and the raisins/cranberries; stir to combine.
Pour into the baking dish.
Mix the remaining 18 g cinnamon and the sugar. Sprinkle over the top of the batter.
Melt the remaining 28 g butter and drizzle over the sugar and cinnamon.
Bake for 30 minutes, or until a skewer inserted into the center comes
out clean. Remove and cool in the pan on a wire rack. When cool, slice
into square.
