Apple – Apple Sauce Cake
- 184 g Tree Top Low Moisture 3/8″ Apple Dice w/Peel, rehydrated in 118.5 grams Tree Top Apple Juice Concentrate (reconstituted in 592.5 grams water)
- 81 g Tree Top Apple Sauce
- 402 g sugar
- 73 g oil
- 100 g eggs
- 5 g vanilla
- 9.20 g baking soda
- 14 g cinnamon
- 6 g salt
- 256 all-purpose flour
- 99 g chopped nuts (optional)
Preheat oven to 350 F. Rehydrate apples in reconstituted apple juice concentrate for at least 5 minutes. Drain off excess juice before measuring.
In a large bowl, combine sugar, oil, apple sauce, eggs and vanilla. Beat until well blended. Add apples.
Combine dry ingredients and nuts in a medium bowl. Add to apple mixture. Mix well.
Bake for one hour in a lightly greased tube or bundt pan. Can also be baked in loaf pan.
Let cake cool in pan for 10 minutes; remove from pan to completely cool.
Yield: 18 slices
