Lavender Boysenberry Fizz

Lavender Boysenberry Syrup

200 g Tree Top Boysenberry Puree

200 g sugar, granulated

200 g water

8 g lavender buds

Sugared Blackberries

8 g blackberries, fresh

Sugar to coat

 

Directions

Lavender Boysenberry Syrup:

Heat sugar and water in a small saucepan with lavender until sugar is dissolved.

Bring to a boil, then set aside to cool. Strain out the lavender; mix in boysenberry puree and refrigerate.

Sugared Blackberries:

Roll blackberries in sugar to coat.

Assembly:

Lavender Boysenberry Syrup
Lemon wedge
Ice
Club soda
Sugared blackberries
Lemon twist

METHOD:
In the bottom of a pint glass, muddle together the Lavender Boysenberry Syrup and the lemon wedges until fragrant. Add the ice, gin (optional) and club soda. Stir to combine.

Garnish with the sugared blackberries and lemon twist.
