Sweet Potato and Pear Muffin
- 1 ½ cups of Tree Top Pear Purée
- 1 cup of sweet potato purée
- 2 cups of all‐purpose flour
- 3 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon of ground ginger
- ½ teaspoon of nutmeg
- ½ teaspoon of vanilla
- 1 egg
Preheat oven to 350°F. Grease one muffin tin or line with baking cups in the tin.
Combine flour, baking soda, cinnamon, ginger, nutmeg and salt in a medium sized bowl and set aside.
In a large bowl mix together the melted butter, vanilla, sweet potato and pear purees. Add the egg and vanilla and mix until well‐blended. Mix in the dry ingredients.
Spoon batter into the muffin tins. Fill each compartment halfway.
Bake for 20 minutes or until toothpick comes out clean.
