Chewy Fruit Bars


21.70 g Tree Top IM Apple Dices 1743

86 g all-purpose flour

40 g whole-wheat flour

4.60 g baking powder

3 g salt

275 g brown sugar, packed

58 g canola oil

30.60 g milk

100 g eggs

135 g whole-grain granola

63 g dried cranberries

80 g dried apricots, chopped

60 g flaked sweetened coconut, optional



Preheat oven to 350 F. Coat a 13" x 9" metal baking pan with cooking spray and dust lightly with flour.

Spoon flours into dry measuring cups and level with a knife. Combine the flours, baking powder and salt in a small bowl; stir with a whisk.

Combine sugar, oil, milk and eggs in a large bowl and beat at high speed until smooth. Add flour mixture, beating at low speed until blended. Fold in granola and fruit. Spoon mixture into prepared pan. Sprinkle with coconut, if desired.

Bake for 20 minutes or until golden. Cool completely in pan on a wire rack. Cut into 16 bars.
