Brown Sugar Apple Coffee Cake


309 g Tree Top Evaporated or Low Moisture Apple Dices, rehydrated in 21 g Tree Top Apple Juice Concentrate and 89 g H2O

235 g brown sugar

17 g all-purpose flour

23 g butter

2.60 g cinnamon

93 g granulated sugar

52 g shortening

50 g egg

121 g + 122 g skim milk

209 g all-purpose flour

9.20 g baking powder

3.80 g salt



Preheat oven to 375 F. Grease an 8" x 8" x 2" baking pan.

Rehydrate apples in concentrate/water mixture for at least 5 minutes. Drain well.

Mix brown sugar, 17 g flour, butter and cinnamon. In a separate bowl mix sugar, shortening and egg; beat thoroughly. Stir in milk. Mix together 209 g flour, baking powder and salt; stir into egg mixture until smooth. Spread half the batter in baking pan. Cover with half the apples and half the brown sugar mixture. Repeat layers.

Bake for 45 minutes or until toothpick inserted in center comes out clean.
