Arugala Salad with Strawberry Dressing

Salad

2 tbs. Pistachio nuts

1 4-oz. log goat cheese (Chevre)

4 cups arugula leaves

¼ cup berries (your choice)

¼ cup jicama, shaved into thin strips (optional)

Strawberry Dressing

252 g Tree Top Strawberry Fruit Bar Base

60 g Balsamic vinegar

14 g Canola oil

7.50 g honey

dash of salt

 

Directions

Dressing:

Combine all ingredients in a shaker. Shake well to blend ingredients.

Salad:

Spread pistachio nuts on piece of waxed paper. Roll goat cheese in pistachio nuts until well coated.

Slice goat cheese crosswise into 8 slices.

In salad bowl, combine arugula with a few sliced strawberries, topping with berries, goat cheese slices and jicama. Drizzle with strawberry dressing.

Makes 4 servings.
