Preheat oven to 400 F. Grease muffin tins or line with paper cups.
In a medium saucepan, heat milk just until it begins to bubble; add oats and butter. Remove from heat, cover and allow to cool.
In a large bowl, mix together the next five ingredients. Stir in the
apples and brown sugar. Add egg to the oatmeal mixture, mix well and
stir into the dry mixture just to moisten. Do not over mix. (Mixture
will be lumpy.)
Spoon into prepared muffin tins, filling 2/3 full. Bake for 20 minutes or until lightly browned.
* Can also use Tree Top Evaporated or Frozen Apples
Makes 12 muffins.
